This is a sponsored post written by me on behalf of Safeway and features their exclusive O Organics® and Open Nature® products. All opinions are 100% my own. I shop for these products at my local Safeway store!
As the weather cools off, hearty breakfast skillets are where my eyes turn for fast weekend breakfasts. Instead of standard potatoes, I used cubed butternut squash and applewood bacon as a base for my skillet and amped up the flavors with honey and red pepper flakes for some sweet and spicy kick!
As with any good skillet, you’re going to want to serve this bad boy with some over-easy or sunny side up eggs and a sprinkle of fresh chives! The O Organics eggs I used in this recipe are awesome, and I always make sure to keep them on hand. They have a great rich flavor and come at an incredible value. Same goes for the other O Organics and Open Nature Products available in my area exclusively at Safeway.
I appreciate that my local Safeway is able to offer affordable and high-quality products in every aisle of the store. Safeway has you covered whether you’re looking for high-protein, plant-based or gluten-free products. O Organics products are 100% USDA Certified Organic, and Open Nature products provide foods free of over 110 food additives and are made from good, wholesome ingredients.
While this is great right out of the skillet, I also liked the base for this skillet the next day. It actually reheats wonderfully and makes for super-fast and delicious quick weekday breakfasts.
I buy my O Organics and Open Nature products in my area exclusively at Safeway, but you can also find them throughout the Albertsons Companies family of stores including including ACME Markets, Jewel-Osco, Vons, Pavilions, Randalls, Tom Thumb, Shaw’s, Star Market, United Supermarkets and Carrs/Safeway.

Honey Bacon Breakfast Skillet
Equipment
Ingredients
- 12 oz. Open Nature Uncured Applewood Bacon, chopped
- 3 cups butternut squash, cubed
- 2-4 O Organics large eggs
- ½ teaspoon red pepper flakes
- 1-2 tablespoons O Organics honey
- Salt and pepper, to taste
- Fresh chives, garnish
Instructions
- In a large cast-iron skillet over medium heat, add bacon and cook slowly until fat renders out and bacon is crispy, 7-8 minutes.
- Meanwhile, peel butternut squash and cube into about ½-inch cubes. You can also purchase pre-cubed butternut squash which can be a time-saver. When bacon is crispy and browned, remove it from the skillet and pour off bacon grease, leaving about 2 tablespoons of bacon grease. Add butternut squash and cook, stirring occasionally, until butternut squash is tender, about 12-15 minutes.
- While butternut squash cooks, add a small drizzle of bacon grease to a separate nonstick skillet over medium heat. Crack in eggs (I like one per person) and cook for 2-3 minutes until egg whites are set. You can then cover and steam for 30 seconds for sunny-side up eggs or flip and cook briefly for over-easy eggs.
- When butternut squash is tender and browned in spots, add bacon back to the skillet and season with red pepper flakes, salt and pepper. At the very end of cooking, drizzle with honey for a special sweet twist.
- Serve the skillet topped with eggs and garnished with fresh chives.

How to Make Bacon Breakfast Skillet
This recipe starts n a large cast-iron skillet. Add bacon over medium heat and cook slowly until fat renders out and bacon is crispy, 7-8 minutes.
Meanwhile, peel butternut squash and cube into about ½-inch cubes.
At the very end of cooking, drizzle in some honey for a little sweet kick!
You can prepare the eggs how you like them. For me, I add a small drizzle of bacon grease to a separate nonstick skillet over medium heat. Then I crack in eggs (I like one per person) and cook for 2-3 minutes until egg whites are set. You can then cover and steam for 30 seconds for sunny-side up eggs (my fave).
Add the crispy bacon back into the skillet to finish it off and serve the skillet with the eggs garnished with red pepper flakes and chives!
I love this bacon breakfast skillet so much! A perfect weekend breakfast!
