When you are looking for fast meals, it can be nice to use a bunch of different easy-to-prepare ingredients into a wrap of some sort. These Buffalo Chicken Lettuce Wraps are best made with rotisserie chicken (although you don’t have to do that) along with leftover rice. 

Mixing those ingredients with some buffalo chicken basics and you can make a big plate of lettuce wraps ready to serve in just a few minutes! Serve these for a high-protein, low-carb lunch, dinner, or even game-day appetizer option! They have amazing flavor for how fast they are to make. 

What lettuce is good for lettuce wraps?

I like to use a lettuce that has a nice cup to it with a little crunch for these wraps. Something like Romaine lettuce or butter lettuce is always a nice option. I would stay away from iceberg lettuce which is crunchy but not a great shape and also not flexible so you can’t pick it up easily.

How to prepare the chicken for these lettuce wraps

If at all possible, I recommend just using a rotisserie chicken for these wraps. These days, rotisserie chickens are economical and cooked nicely and shred very easily so you can mix in the buffalo sauce. 

If you don’t have a good rotisserie chicken option though, you can still make these. You can either use two cups of leftover chicken if you have some in the fridge or cook some chicken fresh. I would just poach the chicken breasts in a pot with barely simmering, salted water, for about 15 minutes until the chicken is just cooked through. Then cool and shred the chicken.

Other options would be to bake the chicken with olive oil and salt and pepper, or you could make a larger batch of shredded chicken in your pressure cooker(Instant Pot) or slow cooker!

How to make buffalo chicken lettuce wraps?

Once you have the shredded buffalo chicken mixture, these wraps are very easy to make. 

Break apart your lettuce into individual leaves and then stack two leaves together. Top with reheated rice (if you are using it) and then a scoop of buffalo chicken. 

For the vegetable topping, I like to use shredded carrots and celery to complete the buffalo chicken idea as well as some crumbled blue cheese. You could also use blue cheese dressing if you wanted, but I prefer the crumbles for these lettuce wraps.

Then garnish the wraps with an extra drizzle of buffalo wing sauce or hot sauce and some chopped scallions! 

Are these lettuce wraps healthy?

Healthy is a pretty subjective idea, but I generally think of these as being pretty healthy. They are low-carb and high-protein and have a good mix of vegetables. You could make them less caloric by leaving out the rice and blue cheese, but I like those additions, personally. 

In general, I think these are a pretty healthy lunch or dinner option!

What to serve with buffalo chicken lettuce wraps?

These wraps are intended to be a meal on their own and you don’t really need to serve them alongside anything else. 

That said, I could see serving these alongside a nice side dish like a pasta salad or rice pilaf salad. I could also see these being great with a cold noodle salad like soba noodles.

These Buffalo Chicken Lettuce Wraps take a few minutes to make thanks to rotisserie chicken! Wraps are low-carb, high-protein, and very flavorful!

Ingredients 

  • 1 head butter lettuce
  • 2 cups shredded chicken
  • ½ cup buffalo sauce, plus extra for drizzling
  • 1 cup shredded carrots
  • 1 cup shredded celery
  • 2 cups leftover rice, optional
  • 4 ounces blue cheese crumbles
  • Scallions, garnish

Instructions

  • In a medium bowl, shred chicken and add buffalo sauce. Add more if you like your chicken to be more saucy.
  • Reheat leftover rice if you are using in a microwave for 1 minute.
  • Rinse lettuce well and break off lettuce into individual leaves. I like to use two lettuce leaves per wrap.
  • Assemble wraps with a layer of rice (about 1/4 cup) then top with buffalo chicken, shredded carrots and celery, crumbled blue cheese, and drizzle with extra sauce. Garnish with scallions. 
    These lettuce wraps are best served right away.
