I will frequently choose a wrap over a sandwich. For some reason I see them as a lighter lunch option even though I’m not 100% that that is accurate. These Fried Green Tomato Wraps are my favorite way to cap off summer. If you have any non-ripe tomatoes, don’t let them go to waste! 

Especially if you grow your own tomatoes, there are always a good number of tomatoes that just don’t make it to all the way ripe before the frost comes on. Don’t let these go to waste! Lightly breading them and frying them in a shallow skillet is about as good as it gets in my opinion!

Generally, I’m fine with a classic fried green tomato, but if you are looking for more of a full meal, these fried green tomato wraps are amazing. I actually prefer them over a normal sandwich because the contrast between the soft tortilla and crunchy bacon and tomato is pretty amazing.

If you can get your hands on some good green tomatoes, these should be on your meal list!

How to Make Fried Green Tomatoes

Green tomatoes are perfect for frying because they are really firm. They hold up well to heat and also can take a lot of seasoning. I like to season mine well with salt and pepper before they even get breaded.

Then I do a classic dip in flour, then eggs, then cornmeal with some chili powder and salt. Pretty straightforward and these are ready to fry!

Shallow fry these tomatoes in a skillet with just a few cups of oil. You could deep fry them of course, but it’s more work and you only need the oil to come halfway up the tomatoes. Then you can flip them after a few minutes and they fry up beautifully. Here’s my tester tomato!

Meanwhile, bacon! If you know me, you know I’m baking it. 350 degrees for 15-20 minutes and it’ll be perfectly crispy. Don’t get the thick cut bacon though. Just normal thickness for these wraps.

Fry your tomatoes in batches depending on the size of the skillet. About 2-3 tomato slices will make a perfect wrap.

Fried Green Tomato Wraps

These fried green tomato wraps use seasonally available green tomatoes which are lightly fried. The crispy combo with the bacon and creamy dressing is hard to beat!


  • 8 ounces bacon, baked
  • 1 pound green tomatoes, sliced 1/2-inch thick
  • 1 cup all-purpose flour
  • 1 large egg + 2 tablespoons water
  • 1 cup cornmeal
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 2 cups oil, for frying
  • 4 large tortillas
  • Green lettuce
  • Mayonnaise
  • Hot sauce


  • For bacon: Lay out bacon strips on a baking sheet lined with foil. Place in a 350 degree oven for 15-18 minutes until crispy. Then let drain on a few paper towels.
  • For Tomatoes: Slice tomatoes about 1/2-inch thick and season with a pinch of salt and pepper. Prepare breading station with flour seasoned with a big pinch of salt, eggs and water in a bowl, and cornmeal with chili powder and salt in a bowl.
  • Dredge the tomatoes in flour, then eggs, then cornmeal and place on a plate or wire rack. Repeat with all the tomato slices.
  • Heat oil in a large skillet over medium heat. Test temperature by adding some flour and it should sizzle immediately. Fry tomatoes for 2-3 minutes per side, flipping. Ideally, the oil will come up about halfway on the tomatoes. If it completely covers them, that’s okay though.
  • Remove tomatoes and let cool slightly.
  • Make a wrap by spreading some mayo and hot sauce in a thin layer on a tortilla. Place a few leaves of lettuce on top and then a few strips of bacon and 2-3 fried green tomatoes. I like to cut them in half for easier wrapping.
  • Wrap the tortilla up tightly, cut in half, and serve immediately!
