These Buffalo Chicken Lettuce Wraps take a few minutes to make thanks to rotisserie chicken! Wraps are low-carb, high-protein, and very flavorful!
Ingredients
1headbutter lettuce
2cupsshredded chicken
½cupbuffalo sauce, plus extra for drizzling
1cupshredded carrots
1cupshredded celery
2cupsleftover rice, optional
4ouncesblue cheese crumbles
Scallions, garnish
Instructions
In a medium bowl, shred chicken and add buffalo sauce. Add more if you like your chicken to be more saucy.
Reheat leftover rice if you are using in a microwave for 1 minute.
Rinse lettuce well and break off lettuce into individual leaves. I like to use two lettuce leaves per wrap.
Assemble wraps with a layer of rice (about 1/4 cup) then top with buffalo chicken, shredded carrots and celery, crumbled blue cheese, and drizzle with extra sauce. Garnish with scallions. These lettuce wraps are best served right away.
