This summer cocktail is so light and refreshing. The Strawberry basil gin fizz is made with a fresh strawberry syrup that’s delicious with just club soda as well! Cheers!
Ingredients
Strawberry Basil Syrup:*
1poundfresh strawberries
Handful of fresh basil leaves
1cupsugar
2cupswater
Gin Fizz Cocktail:*
1 ½ - 2ouncesgin
1 ½ - 2ouncesstrawberry basil syrup
Club Soda
Strawberries, garnish
Instructions
In a medium pot, add hulled strawberries (I like to cut them in half) along with sugar and fresh basil leaves. Add water and stir together. Cook the mixture over medium heat until the sugar is dissolved and mixture starts to simmer. Turn heat down to low and simmer on low heat, stirring occasionally, for about 20 minutes. Try to skim off any foam that forms on the syrup.
After simmering, let mixture cool for a few minutes and then strain the syrup through a fine mesh strainer. Don’t press on the strawberries or they will turn to mush and ruin your syrup!
Transfer the syrup to a container and allow to cool.
The syrup keeps well in the fridge for a few weeks.
To make a gin fizz cocktail, combine equal parts gin and syrup to a tall glass. Add ice and club soda and stir together. Garnish with fresh strawberries and cheers!
