A simple preparation for white fish, like cod. Baked in a lemon-butter sauce, the fish is tender, flakey and perfect with a side salad or potato side!
Ingredients
4 4-5 ozcod fillets
¼cupbutter
1lemon, juice only
2clovesgarlic, sliced
¼teaspoonsalt
¼teaspoonblack pepper
Fresh parsley, garnish
Instructions
Preheat oven to 375˚ F. In a small saucepan, combine butter, garlic, lemon, and salt and pepper. Heat over low heat until butter is melted and garlic is fragrant. Remove from heat.
Lay out cod fillets in a baking dish and drizzle with butter sauce.
Bake the cod for 15-18 minutes at 375˚ F. Fish is safe to eat at 145˚F and will be flaky when it is done cooking. Try not to overcook the fish as it can dry out, although the butter sauce helps if you overcook it slightly.
Sprinkle finished cod with chopped fresh parsley and serve with sides of your choice.
