In food processor, combine ¾ cup Greek yogurt with kiwi, mint, and 1 tablespoon honey. Blend until smooth.
Repeat blending with last of the yogurt, blueberries and 2 tablespoons honey.
Layer fillings in popsicle mold. I prefer strawberry first, then kiwi, then blueberry last.
Insert popsicle sticks and freeze solid.
Popsicles will keep fine in the fridge for a month or so but then they might get freezer burned or start picking up off flavors.
