Grilled chicken breasts tossed with cubed mozzarella, diced tomatoes, basil, and greens makes for a light and delicious summer meal.
Ingredients
4chicken breasts
2tablespoonsolive oil
1teaspoondried basil
1teaspoonpaprika
1teaspoonkosher salt
1pintcherry tomatoes, halved
6ouncesmozzarella cheese, cubed
Spinach or Arugula
Fresh Basil
Olive oil, for drizzling
Instructions
Add chicken breasts to a bowl with a good drizzle of olive oil, salt, basil, and paprika. Mix together and let sit for a few minutes or you prep them a few hours in advance.
Grill chicken on high heat for 6-8 minutes per side until the breasts are cooked through (will depend on thickness of your breasts).
Let chicken rest for a few minutes and then slice into pieces.
Half tomatoes and toss with cubed mozzarella. Stir in spinach or arugula and drizzle with olive oil.
Stir in diced chicken and a handful of chopped fresh basil. Serve immediately!
If you are going to store it for the next day, don’t mix in the spinach or arugula until just before you serve it so it doesn’t get wilted.
