This quick and flavorful chili is one of my favorite ways to use leftover turkey! This light and easy chili is leftovers done right!
Ingredients
1medium white onion, diced
2clovesgarlic, minced
1jalapeno, diced
3cupschopped leftover turkey
115-ouncecan white beans, drained
14-ouncecan diced green chiles
2tablespoonsolive oil
1teaspoonground cumin
1teaspoonchili powder
¼teaspooncayenne pepper, opt.
3-4cupschicken stock
Salt, to taste
Toppings:
Grated cheese
Avocado
Diced scallions
Tortilla chips
Lime wedges
Instructions
Add olive oil to a large pot over medium heat. Once hot, add diced onion, jalapeno, and minced garlic. Cook, stirring regularly until the veggies soften, about 5 minutes.
Add cumin and chili powder to the pot and continue to stir.
Add turkey, green chiles, and stock. Depending on how soupy you want your chili you will need 3-4 cups of stock. Bring to a simmer.
Add beans and simmer for a few minutes to blend flavors.
