Fast and delicious breakfasts don't have to be hard. While many people like fruit on cottage cheese, I like to change it up with savory toppings sometimes! These are so filling and quick to make!
Ingredients
¾cupcottage cheese
1egg, fried
½mediumavocado
1tablespooneverything bagel seasoning
2tablespoonsdiced tomato
2tablespoonssliced cucumber
Pickled Jalapeno
Fresh chives
Instructions
For egg, heat a medium skillet over medium heat. Add a tablespoon of olive oil and once it is shimmering hot, crack in your egg. Cook for 60 seconds until edges start to brown. Then cover and cook for another 30-60 seconds to set whites. Yolk should still be runny at this point and edges crispy.
Spread cottage cheese in a large bowl. Top with bagel seasoning.
Arrange toppings around the edges of the bowl and garnish with fresh chives.
