A quick but wonderful breakfast pizza recipe using English muffins and a few simple toppings. You’ve gotta make these!
Ingredients

English muffins
3-4
strips bacon
,
crispy
1
large heirloom tomato
1
tablespoon
fresh basil
4
ounces
Mozzarella cheese
,
grated
Olive oil
Salt and pepper
Instructions
Preheat oven to 400˚F. Cook bacon in the oven or in a skillet over medium-high heat until it is browned and crispy.
Dice bacon along with tomato. Stir together and add minced basil.
Stir grated mozzarella cheese into toppings and season with salt and pepper.
Cut two English muffins in half and lay on a baking sheet. Drizzle with olive oil and divide topping mixture between muffins.
Bake at 400 degrees for 8-10 minutes.
Serve immediately!
