Made from scratch quiche with smoked salmon, goat cheese, and chives. Brunch anyone?

1 9 inch pie pan
Ingredients
Pie Crust:
1cupall purpose flour, + 2 tablespoons
8Tablespoonsunsalted butter, cold and cubed
½Teaspoonsalt
3-4Tablespoonsice water
Quiche Filling
6eggs
1CupMilk
½Cupheavy cream
4ouncessmoked salmon
4ouncesgoat cheese
2Tablespoonschives, or dill
Pinchof salt and pepper
Instructions
To make crust, mix together flour and salt in a bowl or food processor. Then cut in cold butter until it resembles pea-sized pieces. Add a few tablespoons of cold water and stir together or pulse a few times.
Turn out dough and press it together to form a tight ball. Wrap and refrigerate for 30 minutes at least.
Roll dough carefully (use lots of flour) into a 12 inch diameter. Transfer the dough to the 9 inch pie dish.
Add parchment paper to the bottom of the pie and fill with a few cups of dried beans.
Pre-bake the crust at 350 degrees for 10-12 minutes. Let cool.
Mix the eggs with the cream and milk. Whisk together well. Add a pinch of salt and pepper.
Layer salmon, goat cheese, and chives in the bottom of the pie crust. Add half of the egg mixture.
Add the last of the filling ingredients followed by the last of the egg mixture.
Bake at 350 degrees for 45-50 minutes until set in the center.
